Ingredients
1 cup quinoa, rinsed
2 cups water
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup kalamata olives, sliced
1/2 cup feta cheese, crumbled
1/4 cup red onion, finely chopped
1/4 cup fresh parsley, chopped
Juice of 1 lemon
3 tbsp olive oil
Salt and pepper to taste
Instructions
Bring water to a boil in a medium pot. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, olives, feta, red onion, and parsley.
In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
