Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup kalamata olives, sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon
  • 3 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Bring water to a boil in a medium pot. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
  2. In a large bowl, combine cooled quinoa, cherry tomatoes, cucumber, olives, feta, red onion, and parsley.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Pour dressing over the salad and toss gently to combine.
  5. Serve chilled or at room temperature.
